Cucumber and Onion Salad

It's a great way to use up all of those extra cucumbers that are literally growing out of our ears this time of year! What is it with men, they always plant TOO MANY PLANTS in the garden! ROFL! This is great for picnics and just regular dinner at home. It's easy to double the recipe or cut in half if need be!

This is for 4-6 servings

2 medium cucumbers
2 medium onions
2-3 TBSP Mayonnaise
1 TBSP Sugar
1 TBSP Vinegar

1. Peel cucumbers and slice thin. Layer in a shallow dish and sprinkle each layer with salt. Let sit overnight. (this "sweats" the excess water out of them)

2. In the morning, drain cucumbers and rinse. Let them dry on paper towels.

3. Slice onions thin and mix gently with the dried cucumber slices.

4. Beat together the mayonnaise, sugar and vinegar until nice and creamy. Stir into the mixed cucumbers and onions.

The dressing should be plentiful so that the salad is creamy. Increase each of the amounts of dressing ingredients if you need more dressing.

Mom also used to stir in a touch of dill and pepper.
